This is everything in my WIAW. A lot…a lot of snacky things.
Looking at this made me realize what I had only half noticed otherwise: I’m in a really snacky mood lately.
You know how sometimes it takes writing down what you do every day to notice behavioural patterns?
I am now noticing how, this past week especially, I’ve been eating a lot of snacks and fewer large meals. As I’m not in the States, I can’t blame this on the aftermath of stuffing myself silly on Thanksgiving.
It might just be that with weather getting cooler, I feel like I need to be eating more often (do you like how I just justified that?).
Or maybe with all the Christmas goodies floating around I realized – subconsciously, of course! – that if I eat smaller meals I can fit in more treats :).
Either way, thanks to Jenn as always for hosting and let’s get this party started…!
Apple Cinnamon Breakfast Quinoa done parfait style.
How? Easy – just follow the recipe in the post I linked above but when everything’s ready, assemble as follows: a layer of quinoa, a layer of yogurt, a layer of apple mixture, and then once again a layer of quinoa, yogurt and top off with apple mixture. I used So Delicious coconut milk plain yogurt, but you can use soy or Greek yogurt!
Other changes: I mixed in some unsweetened shredded coconut and walnuts into the apple mixture, and flavoured the yogurt and quinoa with a sprinkle of cinnamon also and a drop of maple syrup stirred in. This means that every layer is just as delicious on its own as with the one above/below it!

A delicious organic BC McIntosh apple – yes, technically my second apple of the day based on my breakfast. Two apples a day must keep the doctor really far away, right?
A bowl of this amazing Red Lentil Soup with Balsamic Onions and a slice of gluten-free bread. Yes, recipe coming! Check back Friday :).

I had a banana too – yep, I like ’em ripe :).
Keeping it light, probably because of all those snacks, I went with Anna’s Asian Lettuce Wraps – my favourite quick meal! So good and nutritious :).
Oh and later on that evening I indulged in a Better-than-Starbucks’ Ginger Molasses Cookie – there are quite a few of these still kickin’ around my house too…
So yeah, I reckon my snack count hit…what, 5 today? Six, if you count two mandarins as two ;).
