WIAW: Snacks and Soup!

This is everything in my WIAW. A lot…a lot of snacky things.

Looking at this made me realize what I had only half noticed otherwise: I’m in a really snacky mood lately.

You know how sometimes it takes writing down what you do every day to notice behavioural patterns?

I am now noticing how, this past week especially, I’ve been eating a lot of snacks and fewer large meals. As I’m not in the States, I can’t blame this on the aftermath of stuffing myself silly on Thanksgiving.

It might just be that with weather getting cooler, I feel like I need to be eating more often (do you like how I just justified that?).

Or maybe with all the Christmas goodies floating around I realized – subconsciously, of course! – that if I eat smaller meals I can fit in more treats :).

Either way, thanks to Jenn as always for hosting and let’s get this party started…!

Breakfast:

Apple Cinnamon Breakfast Quinoa done parfait style.

How? Easy – just follow the recipe in the post I linked above but when everything’s ready, assemble as follows: a layer of quinoa, a layer of yogurt, a layer of apple mixture, and then once again a layer of quinoa, yogurt and top off with apple mixture. I used So Delicious coconut milk plain yogurt, but you can use soy or Greek yogurt!

Other changes: I mixed in some unsweetened shredded coconut and walnuts into the apple mixture, and flavoured the yogurt and quinoa with a sprinkle of cinnamon also and a drop of maple syrup stirred in. This means that every layer is just as delicious on its own as with the one above/below it!

Snack:

A delicious organic BC McIntosh apple – yes, technically my second apple of the day based on my breakfast. Two apples a day must keep the doctor really far away, right?

Lunch:

A bowl of this amazing Red Lentil Soup with Balsamic Onions and a slice of gluten-free bread. Yes, recipe coming! Check back Friday :).

Snack:

These yummay Maple Pecan Sahale Snacks, seeing as I have a nice big bag floating around. You can too if you enter my giveaway – it doesn’t close until tomorrow night!

Dinner:

Keeping it light, probably because of all those snacks, I went with Anna’s Asian Lettuce Wraps – my favourite quick meal! So good and nutritious :).

Dessert/snack:

Oh and later on that evening I indulged in a Better-than-Starbucks’ Ginger Molasses Cookie – there are quite a few of these still kickin’ around my house too…

So yeah, I reckon my snack count hit…what, 5 today? Six, if you count two mandarins as two ;).

    • Lentil soup is sooo good so long as it’s not bland, which this original recipe was (I got it from some magazine) and I had to work really hard to add more flavour into it, and now it’s yummay! Yeah, it’s my upbringing I think, in Cayman we get local ones fresh and they’re so much better eaten ripe! Glad I’m not alone ;).

I LOVE LENTILS!!!! =) Happy WIAW!!!!! isn’t it crazy to look back at a day and realize a pattern or spot out something that was GREAT and you want to repeat and sometimes that something was missing as well? the little details and irregularities always keep me on my toes and help me out! esp lately, ive been lacking protein!!!

  8. I like snack foods! My WIAW is from Saturday, but it got really cold today and I was reallllllllllly hungry today – I eat so much! And pretty much non-stop! My body’s maybe still getting adjusted to winter? 😛 Your breakfast looks amazing. 🙂

    • The cold weather DEFINITELY makes an impact on your appetite, huh? Thanks love but it really is an easy breakfast to make, just looks fancy ;). Makes it more fun to eat too!

    • Thanks so much Annie! Yeah, sometimes grazing is the best way to eat anyway – certainly prevents overeating! Hope you have a great day too!

  10. That breakfast looks PERFECT! I’ve never had quinoa for breakfast before, only in salads at lunch or dinner time. Is it cooked the same way?

    Your pictures are gorgeous! The balsamic onion soup looks especially good.

    • Thank you Toni! Yes, you cook it with almond milk rather than water or vegetable stock like you might for a dinner recipe. Also rinse your quinoa first and soak it for about 15 minutes in the almond milk before cooking if you can – it makes it lighter and fluffier, and less of that subtle bitterness that sometimes accompanies quinoa and which can work in a savoury recipe but not so much in a sweet!
