Happy Leap Day!
Today is the 29th February – a day we only get once every four years. So enjoy it!
My day was disappointingly low on protein, but I was busy and on the go today so it was all about eating what I could when I could. If I had been home more, or if I had had the foresight to bring my Magic Bullet to work, I would have snuck in a protein shake and amped it up today! Ah well.
As it was, here are my day’s eats. I can’t wait to check yours out! Thanks as always to Jenn for hosting.
BREAKFAST:
Double Chocolate Oatmeal (click here for the recipe!)
SNACK:
Tea with milk and a homemade lemon poppyseed protein muffin (SO good, I promise the recipe will be up soon – these babies are delicious and pack nearly 8g of protein per muffin!)
LUNCH:
An Amy’s gluten-free bean burrito (LOVE these!) and a couple of tablespoons of low-fat sour cream on the side – the easiest ‘take-to-work’ lunch ever!
SNACK:
I needed a big snack to tide me over as I had a diving refresher course after work to get me all ready for some more scuba diving for my trip home in March! I can’t believe it’s been 2 years since I was home (and thus 2 years since I last dived – come on people, it’s always good to refresh your skills after that length of time!). So I went with pineapple, an apple and half a Luna bar (would have loved a whole, but this is all I had left).
DINNER:
Delicious spaghetti squash served in a homemade marinara sauce topped with lowfat feta cheese and fresh basil – recipe coming on this one too, I promise!
Snack:
At the moment it is to be decided but I have a hankering for a VitaTop and some milk before bed – it’s been one of those cold days up here (snow expected tonight!) and that sounds like the ultimate comfort food…I also have some leftover strawberries, so that sounds pretty darn good too…hmm…
That all looks very tasty!
Thank you!
can’t wait for that muffin recipe! poppy seed muffins remind me of my momma! and packed with protein? fantastic.
Thank you! The bummer for some will be that it isn’t vegan, but it is vegetarian and naturally sweetened and I’m super pumped I finally got a baked good that was over 5 or 6g of protein. This one’s nearly 8 and that’s way more my speed!
The muffin looks scrumptious!
I love the mug you have, so cute!
Happy Wednesday! ❤
Thanks Katie! It’s my favourite mug too, I am ridiculously overprotective of it haha.
Happy WIAW!
I want that mug – adorable!
Aw thanks it was a goodbye gift from my last job – a charity mug that was designed by Nicole Kidman (haha the design not my individual mug, I wish!)
Yum looks like a day filled with yummy eats! 🙂 I definitely want that poppy seed protein muffin recipe!! I’d LOVE them 🙂
I promise to get it up this week! Probably on Friday 🙂

Can’t wait for that protein muffin recipe, that looks so good! And that is a lot of protein for one muffin!
Yes, I tried really hard to get the protein count up there! Thanks Jentry :).
I wanna come eat with you!!! I love these lunabars…..ahhhh and I need this oatmeal..I know I’ve told you this before, but I REALLY do!!
xxoo
Sorry to keep tempting you girl! How long do you have left of grain free? And yes, the Nutz Over Chocolate is my favourite LUNA bar for sure!
What great eats! It all looks tasty!! I’ll be excited to see the recipe for those muffins, I love poppyseed treats!
Thanks Annie! I think I’ll have the muffin recipe up Friday, I’m a big fan of lemon poppyseed too!
I love lemon poppyseed! Although I don’t know if I’ve ever seen poppy seeds in the grocery store…
They’re often in the bulk bins or the baking section. They should be in most stores!
I keep looking at these but never get them. I need to though – what’s your favorite one?
Are you talking about LUNA bars? I wasn’t sure what else it could be. I would highly recommend Nutz over Chocolate as a starter flavor – so good!!
The muffins sound delicious…please share your secrets! 🙂
It’s coming on Friday! 🙂
I love chocolate oatmeal!! I have it all the time… chocolate is the best food ever…
Oh yes it is – it should be its own food group!
I am intrigued by the spaghetti squash- definately would love to hear how to do that, and the protein muffin too. I really need to get my protein intake up too.
What a delicious day of eating!
I will post the protein muffin on Friday but it isn’t vegan unfortunately love!…also will post the spaghetti squash recipe, which is easily vegan (just leave off the feta cheese on top) – next week!
