WIAW: Leap Day Edition

Happy Leap Day!

Today is the 29th February – a day we only get once every four years. So enjoy it!

My day was disappointingly low on protein, but I was busy and on the go today so it was all about eating what I could when I could. If I had been home more, or if I had had the foresight to bring my Magic Bullet to work, I would have snuck in a protein shake and amped it up today! Ah well.

As it was, here are my day’s eats. I can’t wait to check yours out! Thanks as always to Jenn for hosting.

BREAKFAST:

SNACK:

Tea with milk and a homemade lemon poppyseed protein muffin (SO good, I promise the recipe will be up soon – these babies are delicious and pack nearly 8g of protein per muffin!)

LUNCH:

An Amy’s gluten-free bean burrito (LOVE these!) and a couple of tablespoons of low-fat sour cream on the side – the easiest ‘take-to-work’ lunch ever!

SNACK:

I needed a big snack to tide me over as I had a diving refresher course after work to get me all ready for some more scuba diving for my trip home in March! I can’t believe it’s been 2 years since I was home (and thus 2 years since I last dived – come on people, it’s always good to refresh your skills after that length of time!). So I went with pineapple, an apple and half a Luna bar (would have loved a whole, but this is all I had left).

DINNER:

Delicious spaghetti squash served in a homemade marinara sauce topped with lowfat feta cheese and fresh basil – recipe coming on this one too, I promise!

Snack:

At the moment it is to be decided but I have a hankering for a VitaTop and some milk before bed – it’s been one of those cold days up here (snow expected tonight!) and that sounds like the ultimate comfort food…I also have some leftover strawberries, so that sounds pretty darn good too…hmm…

    • Thank you! The bummer for some will be that it isn’t vegan, but it is vegetarian and naturally sweetened and I’m super pumped I finally got a baked good that was over 5 or 6g of protein. This one’s nearly 8 and that’s way more my speed!
