Banana Nut Protein Muffins

So I’ve kinda been inundating you with protein muffins in the last few months.

After my first ones – Lemon Poppyseed Protein Muffins – were so popular I asked if anyone wanted any other flavours, so along came:

Now we’ve got banana…you can’t do flavour varieties and not include a banana one, right?? These just like a yummy muffin version of my delicious Banana Protein Pancakes. I know that last sentence sounded unbelievably arrogant, but I am super in love with both those banana recipes right now, I’m sorry!

Banana Nut Protein Muffins

INGREDIENTS (makes 8):

1/3 cup flour (any type, I typically use spelt)
1/3 cup coconut flour
1 scoop vanilla protein powder
1 tsp baking powder
1/4 tsp baking soda
1/4 cup nonfat Greek yogurt
1/2 cup lowfat cottage cheese
3 tbsp unsweetened applesauce
1 large egg
1 medium banana, very ripe
2 tbsp chopped walnuts

DIRECTIONS:

1. Preheat oven to 375 F.

2. Combine dry ingredients in a bowl and stir well.

3. In a blender, add Greek yogurt, cottage cheese, applesauce, banana and egg and blend until smooth.

4. Add wet ingredients to bowl of dry and stir until just combined. If batter seems too dry you can add a splash of non-dairy milk to it.

5. Fill 8 muffin cups with the batter. Sprinkle the walnuts evenly over the top of the muffins.

6. Bake for 15 minutes or until springy to the touch. Enjoy!

QUESTION:

  • What are your weekend plans? It’s a long weekend here in Vancouver, so I’m heading over to Mayne Island – just off our coast – to celebrate a friend’s birthday. A long weekend in a cabin on a remote island with about 8 other friends – I can’t wait!

  1. Feel free to brag about your recipes any time girl 😉 I give you full permission 😉 YOU are amazing!

Your weekend sounds fabulous! Enjoy! Will be thinking of you xo

  2. i really need to make a batch of your muffins. the reason i haven’t is i haven’t ever bought protein powder and i’m really intimidated by that for some reason (don’t ask me why). any suggestions for what kind to buy and where to get it?

    • Haha well, if you don’t want to buy protein powder just fill in the amount with extra flour – 1 scoop of protein powder is about 5 tbsp flour. BUT if you do decide to take the plunge, the ones I found taste the best are whey, so if you are okay with dairy – which I think you are – I would recommend those. I use Kaizen Naturals Vanilla Ice Cream flavour, which is sweetened with stevia, but if that’s not available in the US, I know Designer Whey is and although I haven’t tried it myself I have heard tons of good things about it!

  3. Yeeess.. I am SO making these – loved your other protein muffins, these look great too! Loving the banana nut combo, will let you know how they turn out 😉 x

  4. mmmmmmm I love the walnuts on top! these look amazing Anna, as always 😉

  5. My parents are coming into NYC to visit- I’ve excited!! Enjoy your long weekend : )

  6. these look so tasty and I love that they’re not HUGE. Sometimes you just want a few bites, not a jumbo softball 🙂

    • Exactly! Though I have on occasion doubled the recipe and made jumbo ones as a breakfast on the go hehe. But no, most of the time I just want a snack with my mid-morning tea that still has some health benefits to it!

  7. Have fun on your long weekend. Banana muffins are one of my favs cuz you barely need to add any sweetener. Thanks for sharing this 🙂

    • That’s why I love banana everything! Green smoothies are fab with a banana thrown in – sweet and it masks the taste of the veggies. And pancakes, oatmeal – it’s all sweeter and better with banana!

  8. Mhmm, these look DELICIOUS! I love that each muffin has 8 g of protein!

  9. ittybitsofbalance says:

Man oh man Anna, you’re just spoiling us with all of these protein muffin recipes 😉

I agree with Averie, I love that these aren’t massive and perfect for a little afternoon or mid-morning snackage.

  10. Keep them coming! I love these protein muffins!
